Brioche French Toast Casserole
Ingredients:
1 loaf brioche bread, sliced into 1x1-inch cubes
5 eggs
1/2 cup milk of choice
2 tsp vanilla extract
1/4 cup sugar (optional, an extra 1/4 cup for sprinkling on top)
1 tbsp cinnamon
A pinch of salt
Optional add-ins:
1/2 cup nuts, chocolate chips, raisins, or dried cranberries/raisins
Optional toppings:
Maple syrup or honey for drizzling, powdered sugar, chocolate chips, dried fruit, nuts (like walnuts or pecans), fresh fruit, or nut butter
Directions:
Preheat the oven to 150°C / 300°F.
Place the cubed brioche into a 10-inch square casserole pan, spreading it out evenly.
In a large bowl, whisk the eggs until fully combined.
Add the milk, vanilla extract, 1/4 cup sugar (if using), cinnamon, and salt. Whisk again until smooth.
Stir in any optional add-ins at this stage.
Pour the mixture over the brioche, then gently toss with a spatula or fork to ensure every piece is coated.
Sprinkle the extra 1/4 cup of sugar on top (optional).
Bake for 20–25 minutes, or until the top is golden brown and the custard is fully set.
Remove from the oven and serve with your favorite toppings.
Storage & Meal Prep Tips:
To meal prep: let the casserole cool completely, wrap individual portions in cling film, and store in a freezer bag. Freeze for up to 2 months.
Store leftovers at room temperature in an airtight container for 2–3 days.
Reheat in the oven or microwave before serving for the best texture.
