Pumpkin Bread
Ingredients
1 can pumpkin purée
3/4 cup brown sugar
1 cup granulated sugar
2 eggs
1/2 cup vegetable oil
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon nutmeg
1/4 teaspoon ground cloves
1 teaspoon salt
Directions
Preheat the oven to 350°F. Line a loaf pan with parchment paper and lightly grease.
In a large bowl, combine the pumpkin purée, eggs, vegetable oil, brown sugar, granulated sugar, and vanilla extract. Mix until smooth and combined.
Add the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt. Mix until just combined, being careful not to overmix.
Pour the batter into the prepared loaf pan and spread it into an even layer.
Bake for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
Allow the pumpkin bread to cool in the pan for about 10 minutes before carefully removing it and transferring it to a cooling rack.
Serve warm or at room temperature. You can enjoy it as is, drizzle it with a glaze, or use any leftovers to make the most delicious pumpkin bread French toast.
Store in an airtight container at room temperature for up to 5 days.
