Simple Pie Dough

Ingredients

  • 2 cups all-purpose flour

  • 1 teaspoon salt

  • 1 tablespoon granulated sugar

  • 3/4 cup cold unsalted butter, diced

  • 5 tablespoons ice water, plus more if needed

Directions

  1. In a food processor, combine the flour, salt, and sugar. Pulse a few times to mix.

  2. Add the cold diced butter and pulse until the mixture resembles coarse sand with a few small pea-sized pieces of butter remaining.

  3. Add the ice water, 1 tablespoon at a time, pulsing briefly after each addition. Continue adding water just until the dough begins to come together. You may need slightly more or less, depending on the temperature of your kitchen and how dry the flour is.

  4. Once the dough can be pressed together with your hands, turn it out onto a clean surface and gently shape it into a disc. Be careful not to overwork it.

  5. Wrap the dough in plastic wrap and chill it in the fridge for at least 45 minutes before rolling it out.
