Cinnamon Peanut Butter Granola

Ingredients:

  • ½ cup peanut butter

  • ¼ cup sweetener of choice (honey, agave, or maple syrup)

  • 3 tablespoons coconut oil, melted

  • 2 cups rolled oats

  • 1 tablespoon cinnamon

  • 1 ½ cups mixed nuts and seeds
    (My exact measurements: ½ cup cashews, ½ cup pecans, ½ cup almonds, plus 2 tablespoons flax seeds)

  • ½ cup desiccated coconut

  • Flaky salt, optional

Directions:

  1. Preheat the oven to 300°F (150°C) and line a baking tray with parchment paper.

  2. In a bowl, combine the peanut butter, sweetener of choice, and melted coconut oil. Mix until smooth, then stir in the cinnamon.

  3. Fold in the oats, mixed nuts and seeds, and desiccated coconut until everything is evenly coated.

  4. Spread the mixture onto the prepared tray in an even layer.

  5. Bake for 20–25 minutes, or until golden brown. No stirring is needed; just keep an eye on the color.

  6. Remove from the oven, sprinkle lightly with flaky salt (if using), and let cool completely.

  7. Once cooled, break into clusters. Enjoy immediately or store in an airtight container at room temperature for up to 1 month.
