Strawberry Banana Glow Pancakes

Ingredients:

  • 2 medium ripe bananas

  • 2 eggs

  • ¾ cup flour of choice (I used all-purpose, but oat flour also works well, just add an extra 1 tsp baking powder)

  • 2 tsp baking powder

  • ½ tsp salt

  • 1 tsp vanilla bean powder or 2 tsp vanilla extract

  • ¼ cup milk of choice

  • ½ cup strawberries, diced (plus extra for topping)

For the pan/molds:

  • Coconut oil or butter, for greasing

Optional toppings:

  • Maple syrup

  • Extra strawberries and bananas for decoration

  • Powdered sugar

Directions:

  1. In a bowl, mash the bananas with a fork until smooth and even in consistency.

  2. Whisk in the eggs.

  3. Add the flour, baking powder, salt, and vanilla. Mix until just combined.

  4. Gently stir in the milk.

  5. Fold in the diced strawberries.

  6. Heat a pan over medium heat and lightly grease it. If using heart-shaped molds, grease those as well.

  7. Spoon the batter into the molds (fill slightly below the top, as the batter will rise).

  8. Let the pancakes cook until bubbles form on the surface and the base is set, about 2–3 minutes.

    • If the molds stick, carefully run a small paring knife around the edges after flipping.

  9. Flip and cook the other side until golden and fully cooked through.

  10. Serve warm with your favorite toppings.
