Fluffy Waffle Recipe

Makes 6 medium-sized waffles

Ingredients

  • 2 cups all-purpose flour

  • 3 tsp baking powder

  • 1 tsp salt

  • 1/3 cup granulated sugar

  • 1 1/2 cups milk

  • 1 tablespoon vanilla extract

  • 1/2 cup butter, melted and slightly cooled

  • 2 eggs, yolks separated from whites

Directions

  1. In a bowl, whisk together the flour, baking powder, salt, and sugar until combined.

  2. Add the milk, vanilla extract, melted butter, and egg yolks, and mix until smooth.

  3. In a stand mixer or a separate bowl, whip the egg whites until light and fluffy.

  4. Gently fold the whipped egg whites into the batter until just incorporated.

  5. Preheat the waffle maker.

  6. Spoon the batter into the waffle iron (an ice cream scoop works well for this). Cook for 3–4 minutes on medium heat, or according to your waffle maker’s settings, until golden brown.

  7. Serve with your favorite toppings and enjoy.

Macerated Strawberries

Ingredients

  • 1 cup strawberries, stems removed

  • 1 tablespoon granulated sugar

Directions

  1. Quarter half of the strawberries and set aside.

  2. In a bowl, mash the remaining strawberries into a thick purée.

  3. Add the quartered strawberries and sugar to the mashed mixture.

  4. Stir until combined.

  5. Spoon over waffles and serve.
