Lazy Girl Lemon Hummus

Ingredients

  • 1 can chickpeas, drained and rinsed well

  • 4 tablespoons tahini (well mixed)

  • Juice of 3 lemons

  • 2 tablespoons olive oil

  • 1/2 garlic clove (you can use a full clove, but I prefer less)

  • 1/8–1/4 cup cold water (adjust depending on desired thickness)

  • 1/2 teaspoon cumin

  • 1/2 teaspoon paprika

  • 1 1/2 teaspoon salt (adjust to taste)

  • 1 tsp pepper (adjust to taste)

Garnish (optional)
Paprika, olive oil, and parsley

Directions
In a blender, add all ingredients except the water, salt, and pepper. Blend until smooth. Slowly drizzle in the water while blending until you reach your desired consistency. Season with salt and pepper to taste.

Top with additional olive oil, paprika, and/or parsley if desired.

Store in an airtight container in the refrigerator for 3 to 5 days.
