Restaurant-Style Avocado Toast
Ingredients:
1 piece of bread, toasted (I like to use sourdough)
1/2 avocado
1 egg, hard-boiled
1/2 lemon, zested
Olive oil
1 tsp finely diced chives
Flaky sea salt
Cracked black pepper
Directions:
Place the egg in a pot and fill with cold water until the egg is fully submerged. Bring to a boil. Once boiling, let it cook for 6–7 minutes. Remove from the heat and transfer the egg to an ice bath for 3 minutes to stop the cooking. Peel the egg and cut it in half.
Place the avocado on a cutting board and cut it in half, going around the pit in the center. Gently pull the two halves apart.
Peel the skin off the avocado and place the avocado half horizontally on a cutting board. Thinly slice.
Toast your bread, then drizzle it with olive oil. Add the sliced avocado on top in an even layer.
Place the halved egg on top of the avocado. Sprinkle with chives, cracked black pepper, flaky sea salt, and lemon zest. Finish with another drizzle of olive oil and enjoy.
