Single Serve Vanilla Chia Seed Pudding

Ingredients

  • 2 tablespoons chia seeds

  • A pinch of salt

  • Optional: ½ teaspoon cinnamon and ½ teaspoon vanilla bean powder (for extra vanilla flavor)

  • ⅔ cup milk of choice (I used almond milk)

  • 1 teaspoon vanilla extract

  • 1 teaspoon sweetener of choice (such as honey, agave, or maple syrup), or more or less to taste

  • 1 large tablespoon yogurt (such as Greek yogurt or vanilla yogurt)

Directions

  1. In a container or bowl, combine the chia seeds, salt, cinnamon, and vanilla bean powder (if using). Stir to mix.

  2. Add the milk, vanilla extract, sweetener, and yogurt. Mix well using a fork or whisk. If using a lidded container, secure the lid and shake until thoroughly combined.

  3. Refrigerate for at least 4 hours, or preferably overnight, to allow the pudding to thicken.

  4. Enjoy as is, or top with your favorite fruit, nuts, granola, or shredded coconut.
