Small-Batch One-Banana Banana Bread

Ingredients

  • 1 ripe banana

  • 1 egg

  • 1 teaspoon vanilla extract

  • ¼ cup sugar

  • 6 tablespoons flour

  • ¼ teaspoon baking soda

  • ¼ teaspoon baking powder

  • 1 teaspoon cinnamon

  • ⅛ teaspoon salt

  • ¼ cup butter, melted and cooled to room temperature

Directions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 6-inch cake pan or line it with parchment paper.

  2. In a mixing bowl, mash the banana until mostly smooth. Add the egg and vanilla extract, and mix until combined.

  3. Stir in the sugar.

  4. Add the flour, baking soda, baking powder, cinnamon, and salt. Mix until just combined.

  5. Pour in the melted, cooled butter and stir until fully incorporated.

  6. Transfer the batter to the prepared 6-inch cake pan and spread evenly.

  7. Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the banana bread to cool slightly before slicing and serving.

Optional Add-Ins: Chocolate chips, chopped walnuts, pecans, shredded coconut, or raisins.
