Snickerdoodle Ice Cream Sandwiches

Ingredients

  • 1 batch of homemade snickerdoodle cookies

  • 1 batch of homemade snickerdoodle-style ice cream

  • ¼ cup snickerdoodle cookies, finely chopped into the size of breadcrumbs

To Assemble the Sandwiches

  1. Place the desired number of cookies in the freezer for 10 to 15 minutes before assembling. I like to make about 4 sandwiches, which use 8 cookies.

  2. Scoop the snickerdoodle ice cream onto one cookie, then top with another cookie and gently press together using the palm of your hand.

  3. For extra crunch, roll the sides of each sandwich in snickerdoodle bread crumbs.

  4. Enjoy immediately, or wrap each sandwich in parchment paper and store in the freezer.
