Snickerdoodle-Style Ice Cream

Ingredients

  • 8 snickerdoodle cookies

  • 1.5 quarts vanilla ice cream

Directions

  1. Place the vanilla ice cream in the refrigerator for about 3 hours to soften. You want it to be soft and slightly melted so it is easier to mix.

  2. Break 4 of the snickerdoodle cookies into chunks. Grind up the other 4 snickerdoodle cookies into breadcrumb-sized pieces. Set both aside.

  3. Transfer the softened ice cream to a large bowl. Add in most of the snickerdoodle bite-sized chunks into the mixture. Keep a few pieces out to top off the ice cream later on.

  4. Fold in 1/4 cup of the breadcrumb-sized snickerdoodle cookies.

  5. Add half of the ice cream mixture to an ice cream container. Sprinkle with a thin layer of finely crushed, breadcrumb-sized snickerdoodles, then add the remaining ice cream mixture on top.

  6. Top with the last broken snickerdoodle cookie and a little more of the finely crushed cookies.

  7. Place in the freezer until frozen solid, about 4 to 5 hours.
