Dot Cake Inspired Sugar Cookie Recipe

Makes 12 cookies

Ingredients

  • ¾ cup unsalted butter, softened

  • 1 cup granulated sugar

  • 1 ½ teaspoons vanilla extract

  • 1 egg + 1 egg yolk

  • 2 ¼ cups all-purpose flour

  • 1 ½ teaspoons baking powder

  • ½ teaspoon salt

For the Dot Cake effect:

  • ½ cup rainbow sprinkles

Directions

  1. In a bowl or stand mixer, beat together the butter and granulated sugar until light and fluffy.

  2. Add the vanilla extract, egg, and egg yolk. Mix until fully combined.

  3. In a separate small bowl, whisk together the flour, baking powder, and salt.

  4. Add the dry ingredients to the butter mixture and mix until just combined, and a dough forms.

  5. Cover the dough with cling film and place it in the fridge to chill for at least 30 minutes.

  6. Preheat the oven to 350°F and line two baking trays with parchment paper.

  7. Form the dough into balls. I suggest using about 65 g of dough per cookie, or roughly 3 tablespoons.

  8. If using rainbow sprinkles, roll each dough ball in the sprinkles until coated.

  9. Place the dough balls onto the prepared baking trays, leaving space between each cookie.

  10. Bake for 7 to 10 minutes, or until the edges are set.

  11. Allow the cookies to cool on the baking tray for at least 5 minutes before transferring them to a cooling rack to cool completely.
