Simple Granola

Ingredients:

  • 2 cups oats

  • 1 ½ cups mixed nuts and seeds
    (I like using cashews, almonds, pecans, hemp seeds, flax seeds, chia seeds, sesame seeds & pumpkin seeds)

  • ¼ cup coconut flakes

  • 1 tbsp cinnamon
    (feel free to add nutmeg, cardamom, allspice, etc.)

  • ¼ cup coconut oil, melted and cooled

  • ½ cup honey
    (or maple syrup / agave for a vegan version)

  • 2 tsp vanilla extract

  • Flaky sea salt

Directions:

  1. Preheat oven to 300°F (150°C) and line a baking tray with parchment paper.

  2. In a bowl, combine the oats, nuts and seeds, coconut flakes, and cinnamon. Mix well.

  3. Add the coconut oil, honey, and vanilla, and stir until everything is evenly coated.

  4. Spread the mixture onto your prepared tray in an even layer.

  5. Bake for 20–25 minutes, or until golden brown. No stirring needed, just keep an eye on the color.

  6. Remove from the oven, sprinkle lightly with flaky salt, and let cool completely.

  7. Break into clusters, enjoy, and store the rest in an airtight container at room temperature for up to 1 month.
